Live Yeast Bread.

- Flour:- 500gram
- Water:- 280gram
- Gluten Flour:-10gram
- Bread Improver(amylase):- 2.5gram
- Sugar:- 5gram
- Salt:- 10gram
- Lard:- 10gram
- Live Yeast:-15gram.
- [1oz equals 30gram]
Special Instructions:
1] Dissolve Live yeast(compressed yeast) in 280gram water
2] Add all other ingredients to bread machine.
3] Add water/yeast mix.
NOTES:
Bread improver is an enzyme derived from Soy plus a few other things such as Vit.C.
Live yeast is essential and is available from most good
delis.Dry yeast recipes simply cannot compare.
Comments:
The above produces a superb loaf with none of the
excessive yeast residue of the "dry yeast" varieties.
